Well, January was cold, wet and miserable and February doesn’t seem to be any different thus far so why not just kick back and enjoy January’s Credit Crunch Munch Roundup? We’ve had a delicious array of entries (27 in total) and if you haven’t entered before we’d love to see you for February’s challenge which is now open over at Fuss Free Flavours where Helen is eagerly awaiting!! So without further ado here are January’s entries:
- Marissa’s Tortilla Chips Party Snack from Coffee and Vanilla uses basic ingredients we all have and is great for kids to make!
- Rhubarb, Ginger and Orange Jam from From Plate to Pen looks just divine and a great way to use up all the lush winter oranges around at the moment!
- Happy New Year Smoothie from Feeding Boys will certainly put a spring in your step with its shot of espresso, go see what other hidden delights this smoothie contains!
- Festive Fried Rice is on offer from Onions & Paper, using up those pigs in blankets – worth making extra just to enjoy this dish me thinks!
- Slow Cooked Borlotti Bean Chilli from The Veg Space is a fabulous tasty meal for batch cooking and freezing!
- Flower Sprout and Brie Mini Filo Pies from Belleau Kitchen just oozes with lushness and also introduce us to a funky new vegetable!
- Brie, Leek & Onion Quiche from The Baking Explorer looks like a great vegetarian family meal and is very economical as Kat makes her own pastry here!
- Artichoke, Bacon & Onion Hash from Roast Chicken and a Country Walk is a great winter warmer and using the microwave to cook the artichoke earns extra frugal points!
- Sprout and Chestnut Soup from Casa Costello sounds just the ticket for a glut of sprouts and delicious it sounds too!
- SPAMbled Eggs and SPAM Fries from Foodie Quinne makes great use of this store cupboard staple, economical and very tasty!
- Smoked Salmon Pie from Stephanie Jane makes use of those cheaper smoked salmon offcuts for a really tasty pie!
- Cheesy Fish Chowder Pie from me – combining 2 of my favourite things, Fish Chowder and Pie!
- Mexican Cabbage Soup from The Taste Space looks utterly delicious and uses something new to me, soy chorizo!
- Roasted Cauliflower and Garlic Soup with Almond and Parmesan Crumble Topping from Feeding Boys sounds like the perfect dinner party starter that won’t break the bank!
- Roast Red Peppers with Tomatoes from Heidi Roberts Kitchen Talk are a superb side dish or a fab basis for a soup!
- Mature Cheddar & Wholegrain Mustard Scones from Elizabeth’s Kitchen Diary have my mouth watering, split with some butter, what could be nicer and so much cheaper than buying them?
- Turkey & Mushroom Creamy Pasta from Jibber Jabber is the perfect delicious dish to use up that leftover turkey and a few mushrooms!
- Slow Cooker Vegetable & Cider Cassoulet from Tales from the Kitchen Shed is a hearty mix of vegetables cooked in cider with a savoury bread crumb topping – a great way to use up all those odds and ends vegetables!
- Quick & Easy Roasted Cherry Tomato Sauce from Elizabeth’s Kitchen Diary – saving some tomatoes from the bin at work Elizabeth made this delicious sauce!
- Autumn Puff Pastry Mince Meat Trees from A2K is just the most fun and creative way to use up mincemeat that I’ve ever seen!
- Baked Farro Risotto from The Veg Space looks like a delicious vegan meal and has introduced me to a new grain which I shall now look out for!
- Apple Pancake from Ninja Killercat – a lovely dish Claire put together one morning when she got bored of having toast, using grated apple in the mixture is a fab idea!
- Slow Cooker Aubergine, Pepper & Mozzarella Bake from BakingQueen74 looks just fabulous and reminds me of a cross between ratatouille and pizza!
- Brocolli & Pea Pesto Pasta from Jam and Clotted Cream looks just delicious and the perfect way to get picky eaters to eat their greens I’m sure!
- Curly Kale & Butterbean Soup from The Veg Space looks like a nutritious and hearty soup to ward away the chilly weather!
- Warming Winter Vegetable Soup from We Don’t Eat Anything With A Face really does sound warming with the addition of ginger and turmeric plus a great way to clear out the vegetable drawer!
- Warm Cheese & Herb Scones from Family Friends Food look so tasty and just perfect with a bowl of soup!

So many comments I almost gave up trying to find the end! everyone’s outdone themselves this past month. So many wonderfully frugal and seasonal recipes. I have my eye on Dom’s Sprout Flower and Brie Tartlets II love sprout flowers!), and Kate’s Mexican Cabbage Soup with the vegan chorizo. Vegan chorizo is just about the only non “real food” vegan product I buy. It’s really tasty!
