So Shrove Tuesday is upon us again so I thought I’d share my 3 favourite Pancake Day recipes along with some from fellow bloggers plus some tips to make the day go smoothly!
Last year I made a Chilli Pancake Stack which I have to say was out of this world and the family went crazy for it. This is savoury pancake utopia as there are coriander leaves in the pancake batter, layers of beef chilli and a melted cheese topping decked with jalapenos – you have to try this, your family will love you even more!
My next offering is my Lemon and Raisin Scotch Pancakes which I made after buying them for several years and realising I could quite easily make them at home. These can be eaten hot or cold and go especially well with my Granny’s Quick Lemon Curd!
These Monster Pancakes are sure to go down well your kids as they can make their own freaky faces with fresh fruit. Made with coconut oil and filled with Nutella these are super tasty pancakes!
My final offering is these American Style Blueberry and Banana Pancakes which were inspired by “This Morning”. These are totally scrummy served with lashings of maple or golden syrup and extra blueberries.

Tips for a smooth pancake day
Firstly make your pancakes in advance, otherwise you feel like a sous chef and are lucky if you even get to have a pancake to yourself with the hungry savages, I mean family demanding their next pancake. Pop the made pancakes onto a plate, cover with foil and keep or re-heat over a pan of simmering water. That way you can all sit at the table together and enjoy your fair share along with the family.
Have an assortment of toppings available on the table so that half the family doesn’t have to leave the table and start raking around the cupboards for their favourite topping,
We like the classic, lemon and sugar as well as maple syrup, jam, chopped bananas, blueberries, vanilla ice cream and chocolate sauce.
Finally, make enough! If you family are like mine they seem to have hollow legs where pancakes are concerned and can never have too many so make double (you can always freeze any spares)!
