This is not so much a recipe but just a simple way of jazzing up a plain croissant dough. Having woken up late today it was nearer to lunch time than breakfast so I decided that it was the perfect opportunity to try out my idea for Cheese and Ham and Almond Croissants. What could be nicer for a spot of brunch or even a packed lunch?
My children wolfed down the Cheese and Ham Croissants and even had a splodge of ketchup to go with them. It was only myself and my husband who liked the Almond Croissants though! The possibilities are endless so I hope I’ve inspired you to have a go with your own fillings!
The photos aren’t great as everyone just wanted to eat them so it was a case of shoot and go!

Wow! Making your own croissants. That’s genius Camilla! Lovely way to start the day . Warm and crispy. When I lived in Paris , I used to have almond croissants for breakfast and they were just soooooo good. Not great for the waistline but delish nevertheless!
Camilla
Well, more customising my own croissants and saving a little money in the process. Thank you for your enthusiasm! I too love Almond Croissants and they are very naughty but very nice:-)

Used this dough last week…. Been asked to make a supersize croissant for someone next week, now I can jazz it up a bit, great ideas!

Looking at the photos, I think the trick is to keep the filling all down the end (like the marzipan ones) to allow the pastry layers to fluff up more. Also allow fillings to get nearer to room temperature before filling croissants. Chocolate would be a great one too! Oh, I’m going to have to buy some more!
Jacqueline
I have never tried croissant dough before, but you have inspired me to give it a go and think about savoury fillings too. Great idea!!!
Camilla
I don’t think I’d ever bought this dough before either but thought it would be good to have in the fridge and try to recreate croissants I’ve eaten out in the past!
