Excellent Grace! I think half a can of coconut milk would be fine, I just always use the Maggie powdered stuff as it’s so handy and budget friendly.

This soup is going straight on the menu for lunches this week, love the idea of adding curry paste, YUM! Could I substitute the coconut milk powder for 1/2 a tin of coconut milk instead?

What I love about this recipe besides being Vegan is how easy it is to make. Also, enjoyed playing around with it. I’ve also made it with fresh rosemary from my garden. Another time, I spooned in a dollop of homemade Vegan pesto – divine! An added topping of garlic sourdough croutons: goes well:)

Hi, it’s difficult to know how much coconut milk you should use in place of the powder, I would play it by ear and taste as you go along. Maybe decrease the water in the stock and up the coconut milk.

It’s usually in the aisle where you find Indian spices in larger quantities but could be different where you are!

Now this is the best fast food, ever! Great idea – I need to look out coconut powder, as haven’t yet seen this in the shops. Where we are out of Paris, I get the feeling we are way behind everyone else on the vegan trail.
