I wouldn’t have tried this as I would have thought the bacon would overpower the salmon, but apparently not judging by the comments! I’ll show wife and we might try this soon!

I’m not keen on the squeezy coriander tubes as the use by date is so short after you’ve opened it, but it seems like you use quite a bit for this recipe so that might not be a problem.

In reply to Claire @foodiequine. It's so great when you come across a recipe that so simple but so effective so I can't thank Nigel enough:-) If your trout fillets are the skinny type you might want to roll them up or the bacon won't have a chance to crisp up before the trout is cooked through.

I’m definately going to give this a go with some yellow label reduced price trout fillets that are languishing in my freezer. Wouldn’t have thought of using the squeezy coriander like this.
