Reminds me Boudin’s Bakery in San Francisco, where they make their (delicious sourdough) bread into all different animals! Turtles, crocodiles etc They do it against a street window so you can watch!

In reply to Paul Wilson. All I know is that what starts out crusty looses its crustiness with time. When you freeze & thaw rolls they become soft, equally if you wrap freshly baked bread in a bag or airtight container it also becomes soft - it needs air to be crusty.

Is there a way to control how soft the crust is? I like soft crusts for sandwiches, but they always come out too crusty for my liking.
