My son in law doesn’t like and won’t eat mashed potato so I played around and came up with the following. Chunks of lamb shoulder and fried onions as per the recipe. Served alongside boiled minted baby potatoes with garlic butter. Roasted Brussels sprouts with bacon pieces and walnuts and a drizzle of spiced honey and balsamic vinegar. All consumed with great gusto and no complaints.

I made this last night and it was a great success! When I was deciding if I would make it I thought it might be a bit plain, but it was delicious! And so simple! I served it with a side dish of vegetables mixed with crispy bacon which went very well with it. I will definitely make it again! Thank you for giving us the recipe.

Snap Claire, we’re having turkkey too. Been in the freezer since after Christmas as a very cheap one came my way so now seemed like a good opportunity to use is up:-)
