Monday Pie is a great dish for using up your leftover roast beef! So quick, easy and delicious, you’ll be making this again and again!
I thought it was high time I updated my popular Monday Pie recipe and photography.
This is a traditional recipe for using up your roast beef from Sunday which I originally adapted by adding mushrooms and par boiling the potato slices.
When you make something a lot you often make little tweaks and so the only one I have made since is to add a whole tin of tomatoes instead of just half.
We don’t have my Monday Pie nearly as often now since my daughter became a vegetarian but as my son came back from University at the weekend we had roast beef and so of course on Monday it had to be Monday Pie!
I have to admit that my mind wasn’t completely on the job in hand.
Having a poorly cat that I’m nursing round the clock, a daughter who suddenly had an asthma attack and needed collecting from school just as 2 trucks delivering and mixing concrete had parked across my driveway and then having the noise of said trucks on my return meant that I forgot to add the gravy powder to the recipe.
I also blame having a new laptop which I haven’t wanted to ruin by bringing into the kitchen so thought that I’d use my Google Home Mini to read out the recipe.
So although I got the gravy powder out of the cupboard, I skipped forward and then simply forgot.
I had tried using my phone but it kept going to sleep, maybe I need to adjust the settings as you can’t keep touching your phone while you’re cooking!
So just imagine that the sauce is a little browner and thicker as I didn’t want to have to wait another couple of months before my son came back from uni again!
If you haven’t had Monday Pie before I do hope you try it as it’s so easy to make and comfort food at its best!
You simply start by par boiling your potato slices and then mix all of the other ingredients together bar the cheese which is added 15 minutes before the end.

Can I add the left over gravy from the roast instead of the gravy powder and flour?
Camilla
The gravy powder and flour absorb the moisture from the tomatoes and beans and thicken the sauce so if you add just gravy I think the pie would be too wet. You could experiment but as it’s not something I’ve done I can’t give any solid guidance.
Suz
Was surprised that raw onion would go in with rest of ingredients so sautéed it first with clove of garlic too, glad I did as turned out perfect.Added a little extra 2 table spoons of water so not too dry.Add plenty of salt and pepper.Could add herbs etc to pimp up but great kept plain for kids. Was great meal for leftover red meat
Camilla
Glad you like the recipe and made it to your preference:-)
Tina
Always a favorite. Very norish
Camilla
Such a delicious way to use up beef isn’t it:-)

The first time I heard of Monday pie was out of a recipe book my first wife was given in 1972 along with the milk deliver, we loved it, I must have a go at making it. Thank you for reminding me of good food.
Camilla
Awesome, glad to bring back some memories:-)
Karin Coverdale
After reading your comment it rang a bell with me and yes I have the same book which I got from the milk man all those years ago. I’m making this meal today
Fiona Hawkins
looking forward to trying this as I’ve just bought more beef slices than I need and it makes sense to put them in pie. Thanks for this easy recipe!
Camilla
I was scratching my head for a moment then, then I twigged they’re cooked beef slices:-) Yes perfect!
Caz
Made this for my fiancé & sister with their leftover beef – it went down a proper treat they loved it. I plopped a little bit of BBQ sauce in it also, but only a little, only thing I did different. Might have to make a vegan version for me!
Camilla
So glad they enjoyed it and so good of you to cook with meat given that you’re a vegan. Yes a version using minced Quorn would probably work well:-)
Julie graham
Just made this for tea tonight absolutely delish & so easy to make would definitely make it again thank you so much for the recipe
Camilla
Awesome Julie, so pleased you like the recipe:-)
Liz
Tasty and comforting – my only tweak would be to fry the onions first as they were a bit raw tasting (I may not have chopped them finely enough though). Thanks for the recipe!
Camilla
Hi Liz, thank you. I’ve never noticed a raw onion taste so perhaps you’re right about chopping finer next time:-)
Gill Wynter
Perfect for a Monday, or any day you have left over meat, So nice I made this a while ago, my husband asks for it every Monday after our roast on a Sunday! Quick, easy & tasty!! Thank you Emily
Camilla
Awesome, so happy that you and your husband like my Monday Pie:-)
Bob Isgrove
Hii.
Great recipe and very easy to follow, except for the oven temperature. Is the 190 for ordinary (do they still exist?) ovens or for fan ovens.
Thanks Bob
Camilla
Hi Rob, all my oven temps are for standard ovens (I do have a fan oven but I think it was made on a Friday so it’s never behaved like a fan oven, so if I reduced the temp like they said I should, everything was uncooked).
Janet
Lovely way to use up roast beef! My beef chunks were in the freezer, so I fried the onions and mushrooms first, and heated up the beef with the tomatoes and baked beans first before putting them in the casserole. I didn’t have any potato, so i topped it with sliced butternut – it was delicious!
Camilla
Excellent, great that you made the recipe your own:-)
Tony
Made this for the first time with oxtail soup instead of tomatoes. Smells and tastes amazing!
Camilla
Excellent Tony, great to put your own spin on it:-)
Jenny
This was such a tasty treat tonight,. It was Monday pie on Tuesday!
We loved it.
Camilla
Excellent Jenny, so glad you like Monday Pie even on a Tuesday:-)
Emily Stimpson
So quick, easy and delicious

Lori
My mum has just tried this recipe and put it in the oven. Hope it looks and taste like yours. Thank you for sharing much!
Camilla
Fab, do let me know what you thought!
Susan Dubose
This is my absolute favourite type of pie – one made from leftovers =) it’s nice to hear how other people go about it too – I call mine Jumble pie!
Camilla
Thank you Susan, always great to use up leftovers:-)
Helen
My family thoroughly enjoyed this, I added a little left over gravy and just flour not gravy powder, worked really well. Will definitely be making this again!
Camilla
Excellent, so glad you enjoyed it! Very envious of your flour LOL:-)
Sharon Crabtree
I am wondering if this dish can be frozen after cooking?
Camilla
Hi Sharon, I’ve never tried freezing it but can’t see any reason why you couldn’t.
Julie Tan
Is it possible to use a root vegetable mash as a topping rather than parboil slice potatoes?
Camilla
I don’t see why you couldn’t do that:-)
Lydia
This was SO good! I didn’t have mushrooms on hand, so didn’t add them but did everything else as instructed. We all loved it!
Camilla
Excellent Lydia, so glad you like it:-)
Laura
I tried your recipe, which turned out great, I did add some diced potatoes. Keep up the good ideas!!
Camilla
Thank you Laura, glad you enjoyed it:-)
Erika
Great meal 🙂 Was looking for something different with minced beef, thank you!
Camilla
Glad you enjoyed it Erica!
Sam
Really tasty, thank you for sharing your recipe. I didn’t have any mushrooms but for us it didn’t affect our enjoyment of the ‘Monday Pie’ I shall be making again- Many thanks
Camilla
Excellent Sam, so glad you enjoyed it:-)
Debbie
I have made this a few times now and I have used whatever we had for Sunday dinner, Beef, Chicken or Ham. I now put chorizo in with whatever meat I use always tastes good and goes down well with the family.
Camilla
Excellent Debbie, glad you have made it your own. Good to know it works well with other meat too:-)
Lesley
Just popped this in the oven. Went looking for “leftover roast beef recipes” and this one seemed most intriguing of those on offer. I had to make all of the other things to go with it, including the beans, but still looks worth the effort.
I felt compelled to make it on a Monday also though I’m sure it would be fabulous any other day of the week too.
Camilla
Thanks Lesley, I hope you enjoyed it:-)
Alan Jenkinson ,living in Central France
Try this with cold roast Wild Boar Shoulder, Cooked Long and Slow
Camilla
If only I had access to wild boar!
Candace
I love usinmg left over sunday roast and make something similar toi this. I tend to cook extra boiled potatoes and mash them for the pie topping but sliced potoates look good too
Camilla
Making two meals out of one is so satisfying isn’t it:-)
Rosie
If you have a portion leftover and what would be the best way to reheat it?
Made this recently and loved it but due to the cooking dish I used the portions were a bit bigger than we would have liked. Want to make it again but don’t want to waste any!
Camilla
Hi Rosie, if you have a microwave I would reheat it in that for a few minutes until piping hot. A food thermometer is great for this!
Dannii
I am on board with anything that reduced food waste. I love throwing a can of baked beans in to a hearty pie too.
Camilla
Baked beans are so versatile:-)
Hilary
Does leftover roast chicken work in a Monday pie?
Camilla
I have only ever used beef so can’t say how that would taste I’m afraid. But would you put chicken as a sub for lamb or beef in a Shepherd’s Pie? That’s probably your answer!
Crystal
I love the idea of using left overs for another meal and this one is superb. My mum used to do a pie like this with roast left overs. She’d mash the potatoes for the layer on top. That’s an alternative, but I like the idea of potato hash layer also. Thanks
Camilla
Thanks Crystal, yes we have something called Shepherd’s Pie that has a mashed potato topping, this is far quicker and easier though.
Jemma
I’m always looking for new ways to use up meat from the Sunday roast. What a delicious reinvention!
Camilla
Thank you Jemma-)

Camilla
Fab Ian, I’ve never thought to try it with pork!
Janice
Beef and lamb get whizzed in the food processor with an onion, add gravy and top with mashed potatoes for a cottage or shepherd’s pie. That’s my Monday pie! Yours sounds good too.
Camilla
Can’t beat leftovers can you:-)
Margaret Gallagher

I always cook a beef roast that is way to large and always have left over beef which often goes into sandwiches. But now I will return to this recipe for what looks like a great way to use it up!

Robert Price

Found this recipe today and made it for dinner with left-over pork. My husband loved it! Thanks for a great recipe. Looking forward to making more from this site.
Thanks.
Camilla
Oh fabulous, I’ve never thought to make it with pork, will have to try that. Glad you both liked it and hope you find more recipes you like:-)
Catherine Lawson
Do you think the Worcester sauce is a key ingredient? I’m going to try to make this gluten free and don’t have any gluten free Worcester sauce (I don’t want to buy a whole bottle just for this recipe). Also, to substitute the flour, do you recommend corn flour or just plain gluten free flour?
Camilla
Hi Catherine, you could leave the Worcestershire Sauce out and with the flour use gluten free plain flour as cornflour has to be mixed with water before use.
Fi
Re Catherine’s question regarding Worcestershire Sauce, Lea and Perrins is gluten free, the company state this fact on line. Enjoy!
Chris Day-Coiley
So tasty, a great combo. My only alteration is making some extra roast spuds the day before and thinly slicing them and placing them on top. Crisp up nicely and a good way to use up the leftovers fully. My toddler loves this dish!
Camilla
Great idea Chris, glad you like it and thanks for sharing:-)
Amy Fidler
Love meals like this, comfort food at it’s best x
Camilla

Camilla
Geat stuff, as Nigel Slater always says, “a recipe should just be a starting place”:-)
Kirsti Peters
That looks so good, I am deffo going to give it a go
Tina
Not tried this but it looks great….. do you think it would freeze ok prior to the potato stage? I only ask as i have quite a large left over piece of beef and thought i may do this and freeze in small batches.
Camilla
I would just freeze the chopped up beef and thaw as required and use for stir fries, this pie or whatever.
Marion Weir
Looking forward to trying this one 😀
Gilly
Surprisingly tasty, and a great way of using up leftovers. Will definitely be making it again.

Susan Joyce Rogers
Sounds good ,perfect to use some left over meat cuts ,thank you
David Weatley
I also had lots of clean plates after cooking this but I would, coz I live on my own. It was too much for one though so I threw most of it in the bin after it had been in the fridge for two days. The phone never rings, either. But the meal was nice
Camilla
Hmm, well next time either make a) a smaller portion or b) make individual portions in those freezer foil trays and freeze for another day for a night off from cooking freeing you up to make a phone call while it’s cooking. Glad you enjoyed it anyway:-)
Paul Wilson
Just the recipe for this time of year.
William Gould
Fantastic! I usually have a cold meat sandwich or bubble & squeak depending what’s left….

Nice recipe! I have a chunk of leftover roast beef I have no clue of what to do with it 🙂 My English friend told me to look for Monday pie, and here I am!
Will try to do it, but probably will need a bit of tweaking for local taste (no baked beans available, I’m afraid)
Camilla
Great, hope you enjoy it:-)

Camilla
Thanks, yes roasts are great for leftover meal ideas:-)
Janice
There is something about adding a tin of beans. I have a Shepherd’s/Cottage Pie recipe and add beans to it and it extends it and adds a lovely sweetness to the dish. My boys always loved it when they were at home, clean plates is another aspect of ‘no waste’
Camilla
I recently saw beans added to a Shepherds Pie and thought that sounded likea really tasty idea so will try that too:-
Heather Haigh
ooh, I do like the sound and look of this. Love ‘free food’ as we call leftover meals.
Camilla
Thanks, yes it’s good not to waste any food:-)
Maya Russell
