Hi Kathleen, no you don’t strain the tea, the leaves get lost in the cake. You could try using Earl Grey, it wouldn’t be my choice but if you like it then I’m sure you’d like it in cake too.

I’ve never frozen it but as there are large chunks of peach in this cake I could foresee it becoming soggy on thawing from the moisture of the peaches being released.
