I am always cynical about quick recipes, especially Indian, as love them to marinade etc… however I was pleasantly surprised by this recipe. Absolutely spot on, and actually made it again soon after. The second time I substituted the onion with Leek and was just as nice, and I always add about 30 to 50% more chilli than any recipe states as I like the kick. Great recipe. Cheers.

Hi Hilary, it’s powdered coconut milk not powdered coconut. I find it in the world food aisle made by Maggie. You could sub with tinned coconut milk but the powdered is cheaper. It won’t be the same without the coconut milk so I would make something else. Have a look at my Prawn Savoury perhaps.

Made this tonight, absolutely delicious. My son usually eats whatever meat or fish is in a curry and leaves most of sauce, tonight he used his naan bread to eat every bit of the sauce. It tasted very much like an Indian restaurant curry.

I adore curry, especially a creamy prawn one like yours!!!! I’ll be pinning this to my curry board to make over the weekend. I always use microwave rice… it’s so easy and convenient, especially for adding to stir fries and soups. But crucially for me it turns out perfectly every time, whereas i’ve never mastered getting it right the usual way!
