Looked for a recipe for leftover roast beef today, and stumbled across this. Even better had a squash, celery and some leeks that needed using – winner!! Anyway I have prepared this today for our tea tomorrow, will throw in slow cooker before work in the morning. Only thing I have done is skip out the speltgrains – kids and hubby will have a fit if I put them in. Cant wait to try – really easy and great use for leftover bits of veg I had. Thanks – will let you know verdict tomorrow 🙂
