Vegetarian Spicy Black Turtle Bean Burgers have added sweetcorn, Cheddar cheese, sriracha and coriander etc. So delicious, even meat eaters will love them!
The other day I came across a bag of black turtle beans that had recently gone out of date at the back of my cupboard.
I’d been sent them last year and at the time I created some delicious Flavours of Brazil Turkey Burgers with Bacon and Pineapple.
So a huge wave of guilt came over me for allowing the beans to languish unloved for all this time.
They looked in pristine condition so I decided that the best course of action would be to cook them all and then I could use them to make something and freeze the rest for another day.
So after a 12-hour soak, I boiled the beans up and after a busy day didn’t feel in the mood for cooking but knew I had to do something.
So I decided to make Spicy Black Turtle Bean Burgers as I’d made chickpea ones before which were delicious.
I started Googling recipes and just grew a little frustrated as they all seemed to mention frying onions first for 10 minutes and adding them to the burgers.
I wasn’t in the mood for a lot of fuss so decided to work on the principle that these were like Frikadeller which uses grated onion.
Then I just needed to add some flavour which came in the form of sweetcorn, sriracha sauce (a new favourite here), cayenne pepper and some chopped coriander.
To make these burgers extra yummy I decided to add some grated mature cheddar.
I was tempted to taste the raw mixture but as it contained raw egg I decided against it so had to wait until the burgers had cooked to know if they were any good.
Well, I needn’t have worried as my family loved them. My hubby even said he preferred them to beef burgers (a closet vegetarian perhaps)?!
I was going to put the rest of the beans in the freezer but I’ve been asked if we can have them again tonight which suits me as I have the rest of a large tin of sweetcorn to use up.
These burgers are so easy to make and much healthier than a beef burger! I know we will be having these often now as they’re such a hit.
Using a bag of beans is much cheaper than buying them tinned and I would advise cooking the whole bag up and freezing what you don’t use which saves on your fuel bill.

Camilla
Thanks Bintu, my store cupboards and an endless source of inspiration:-)
shobha
Delicious burgers.. I suppose we can use any kind of beans also to make them.
Camilla
Hi Shobha, thank you, yes I imagine any bean would be good but these black ones are just perfect due to their size and colour:-)
LINSY PATEL

Camilla
Thank you Linsy:-)

Impressive to avoid food waste by cooking these up. Love the idea of veggie burgers – you have lots of flavours in there so I’m sure the texture was wonderful!!
Camilla
Thanks Ceri, yes I hate food waste so even if things have gone a bit past their best before date I always try to use them up!
Penelope
They look fab – I’m sorely tempted to try them, although my husband is known as our resident carnivore so I’m not sure I’d get them past him! Worth a try though 🙂 I must try Sriacha too
Camilla
Penelope my hubby is the biggest carnivore going and often says “where’s the meat” but even he preferred these to beef burgers! We are all hooked:-)
Emily
I love a veggie burger done well. This looks fab. I would probably use less spice as I’m a wimp – but need to add these to my repertoire x
Camilla
Hi Emily, I don’t think you’d find these too spicy as my 11 yr old daughter even said she’d quite like them spicier last nigh, it’s not an overpowering spice but just enough to give a lovely flavour:-)
Choclette
These sound delicious Camilla. Strapped for time, I tend to go for stir fries and one pot type meals, but I do like a good burger and will push the boat out from time to time. I like your raw onion addition and I’m always up for chilli sauce.
Camilla
Thanks Choclette:-)
Paul Wilson
Great idea, bet they’re ace on barbecues.
Camilla
I think you actually need the oil to crisp them up but they might be ok with the cheese in them, you’d have to cook in a fish slice/cage or they’d fall apart.
Paul Wilson
Yes, good thinking.
Becca @ Amuse Your Bouche
These sound right up my street! I adore black beans (though I usually cheat and use the tinned version), and sweetcorn, cheddar and sriracha are all favourites with me too! Must try these, thanks for the recipe 🙂
Camilla
Aah thanks Becca yes I saw your new found love of Sriracha on your blog, I’ve only recently discovered it myself too. We now all prefer these bean burgers to beef ones:-)
