Delicious Sunny Picnic Quiches made with chorizo, pepper, and cheddar cheese. Perfect for making with children and ideal for lunchboxes!
To celebrate the release of ‘Annie’ on Blu-ray and DVD on Monday 27th April, I was challenged to develop a suitable recipe.
The film stars Jamie Foxx, Quvenzhané, Wallis, and Cameron Diaz who bring the film up to date for a whole new generation.
“The sun will come out tomorrow” is a famous line from the song ‘Tomorrow’, so this is where I drew my inspiration from.
These Sunny Picinic Quiches are great for making with the kids and they can also enjoy them in their lunchboxes like mine have done.
By chance, it also happens to be National Picnic Day today so there is no excuse not to start singing (like I’ve been doing all week) and to get baking!
Just looking at these little quiches puts a smile on my face and better still they taste divine with their light puff pastry cases.
I’m sure Annie would have approved due to her sunny outlook on life. Hers is an inspirational story of rags to riches which I think in the current economic climate is particularly poignant!
I noticed that the Blu-ray & DVD feature sing-alongs including 5 iconic songs from the movie: “Hard Knock Life,” “Tomorrow,” “I Think I’m Gonna Like It Here,” “Opportunity” and “I Don’t Need Anything But You.” This is my kind of movie as I don’t need much of an excuse to start singing and just like baking it’s good for the soul!

Sunny Picnic Quiches
Ingredients
- 375 g Pack of ready rolled puff pastry
- 110 g Cheddar cheese grated
- 45 g Spanish Chorizo slices chopped (the translucent type)
- 7 Cherry tomatoes
- ¼ Red pepper
- ¼ Yellow pepper
- ¼ Orange pepper
- 3 Eggs large
- 150 ml Semi-skimmed milk
- Salt and freshly ground pepper
Instructions
- Pre-heat the oven to 190⁰C
- Unroll the pastry sheet and give it a little roll with a rolling pin to make slightly thinner.
- Cut out circles using a 10 cm pastry cutter and re-roll the rest of the pastry to make more circles until all the pastry is used up. (Should make 14 circles).
- Press the pastry circles gently into the wells of 2 muffin trays.
- Place the muffin trays in the fridge for the pastry to rest.
- Meanwhile, slice 2 slices out of each cherry tomato.
- Then slice the peppers into thin strips about 1 – 1 ¼ cm long (to fit around the tomatoes).
- Whisk the eggs and then whisk in the milk and a pinch of salt.
- Sprinkle half the grated cheese equally amongst the pastry cases (a thin layer), then add a layer of chopped chorizo and finish with the rest of the cheese followed by a grinding of pepper.
- Pour the egg mixture into the cases ensuring they are all equally level.
- Gently place a tomato slice into the centre of each case followed by alternate coloured slices of pepper to surround and form the sun rays. (Or if you haven’t the patience just scatter over).
- Place in the oven for about 25 minutes or until the pastry is cooked and top golden.
- Serve hot or cold.
