Blackberry Tofu Brulée

A low fat, vegan Brulée bursting with luscious blackberries. Totally delicious!

Ingredients

  • 300 g Silken tofu I used firm
  • 50 g Icing Sugar
  • ½ tsp Vanilla paste
  • 225 g Blackberries
  • 5 tbsp Demerara sugar

Instructions

  1. Pre-heat grill on maximum setting.
  2. In a bowl blend together the drained tofu, vanilla paste and icing sugar until smooth.
  3. Stir in the blackberries.
  4. Divide the mixture between 4 ramekins and top with the Demerara sugar (a good thick covering needed).
  5. Place ramekins under the grill until Demerara sugar bubbles and melts.
  6. Cool and chill in fridge before serving.
