Turkey Chilli with Baked Beans

A fabulously tasty chilli made with turkey breast mince and baked beans - so delicious and healthy!

Ingredients

  • 500 g Turkey breast mince
  • 3 tbsp Rapeseed oil
  • 1 large Onion finely chopped
  • 250 ml water
  • 1 x 420g tin Baked beans
  • 1 x 400g tin Chopped tomatoes
  • 4 Cloves of garlic crushed
  • 1 ½ tbsp Hot chilli powder or to taste
  • ½ tsp Ground cumin
  • ½ tsp Ground coriander
  • ½ tsp Smoked paprika
  • ½ tsp Dried oregano
  • ½ tsp Cayenne pepper
  • Freshly ground salt & pepper

Instructions

  • Heat 1 tbsp of oil in a large pan on a gentle heat and sweat the onions until soft.
  • Add another tbsp of oil and then turn up the heat to fry turkey mince until cooked.
  • Then add another tbsp of oil plus the garlic, spices, herbs and seasoning and cook for a minute before adding the chopped tomatoes, baked beans and water.
  • Bring to the boil then cover and simmer for 30 minutes.
  • Serve on a bed of rice.
