Spooky Yogurt Scrolls

What do you get when you cross a scone with a roll - a scroll. Fresh out of the oven have buttered with jam or toast the next day to have for breakfast with marmalade!

Ingredients

  • 375 g Plain flour
  • 25 g Brown sugar
  • 2 tsp Baking powder
  • 2 tsp Bicarbonate of soda
  • 75 g Margarine/Spread
  • 300 g Total Greek 0% fat yogurt
  • ½ tsp Salt
  • 16 Sultanas halved

Instructions

  • Preheat the oven to 200°C.
  • Sift the flour, baking powder, bicarbonate of soda and salt together in a large bowl.
  • Add the cold margarine and cut into the flour using a fork or pastry cutter until the consistency of breadcrumbs.
  • In a smaller bowl beat together the yogurt and 1 egg.
  • Add to flour mixture, stir together with a knife and finally combine to form a dough with your hands.
  • On a floured surface roll out to about 1.25cm / ½ “ thick.
  • Use a gingerbread cutter (or any shape you want) to cut out about 16 shapes.
  • Decorate rolls with sultana halves for the eyes.
  • Beat remaining egg and use to glaze with a pastry brush.
  • Bake in the oven for 10 – 12 minutes until risen and golden.
  • Cool a little on a wire rack and enjoy warm with butter and jam.
