Place cubes of SPAM® Chopped Pork and Ham in a frying pan and fry until slightly browned.
Peel the potatoes and partly cook by boiling for ten minutes.
Then grate the potatoes on bigger side of cheese grater.
Melt half of the butter.
In a large bowl mix together the grated potato, beaten egg, fried SPAM® cubes, parsley and a little black pepper.
Melt a little butter in a frying pan.
Fry 4 large spoonfuls of the mixture for six minutes (or until golden), flip over and fry for a further six minutes.
Meanwhile (towards the end of frying) poach four eggs and then place one on each rosti.
Garnish with parsley or thyme if using.
Serve and enjoy.
