Ingredients
200gPrawnscooked and peeled
300gPasta shapes
½Red pepperchopped
½Green pepperchopped
½Yellow pepperchopped
1Red chillideseeded and chopped
3 - 4Spring Onionssliced
1Avocadochopped
For dressing:
3Heaped tsp chopped parsley
3tbspExtra virgin olive oil
1 ½tbsp.White wine vinegar
2Garlic clovescrushed
Pinchof brown sugar
Freshly ground salt & pepper
Instructions
Cook the pasta according to instructions, drain and cool.
Make the dressing by combining the parsley, olive oil, vinegar, garlic, sugar, salt & pepper in a lidded beaker and shake vigorously.
Combine the chopped vegetables, chilli and prawns with the pasta, pour over the dressing and mix well.
