Easy Slow Cooker Beef Stew

Easy Slow Cooker Beef Stew is a simple dump and go recipe that is both tangy and delicious!

Ingredients

  • 2 onions large roughly chopped
  • 2 celery sticks chopped
  • 2 carrots 1 cm cubes
  • 2 potatoes cut 2 cm cubes
  • 2 cloves garlic minced
  • 400 g diced beef stewing steak, trimmed of fat & sinew
  • 1 tsp dried rosemary
  • 1 tsp sugar
  • 1 heaped tbsp tomato puree
  • 1 tin Italian good quality chopped tomatoes
  • 2 large knobs of butter
  • 1 tbsp Worcestershire sauce
  • 3 splashes Tobasco Sauce
  • 500 ml beef stock made with 2 beef stock cubes
  • 125 g frozen peas 2 good handfuls
  • salt to taste
  • pepper to taste

  • 1.5 tbsp plain flour to thicken (toss with the beef)

Instructions

  • To a slow cooker (Crock Pot) add chopped onions, celery, carrot, potatoes, minced garlic, beef (tossed in flour if using), 1 tsp rosemary, 1 tsp sugar, salt, pepper, heaped tbsp tomato puree, tinned chopped tomatoes, 2 knobs butter, 1 tbsp Worcestershire Sauce, 3 splashes Tabasco Sauce and 500 ml beef stock.
  • Cook on high for 5 - 6 hours or low 7 – 8 hrs.
  • One hour before the end of cooking time add the peas and give a good stir.
  • The stew is ready once the meat is tender and vegetables cooked.
  • Serve in bowls with crusty bread.

Notes

If you're going to be out all day and just want to come home to a cooked meal you could add the peas at the beginning of the cooking process.
Plus if you're really pushed for time you could use some frozen mixed vegetables in place of the fresh vegetables but still use a couple of potatoes.
