Parsnip is such an underrated vegetable. I’ve made soups before with it and they are great. Your version looks and sounds delicious, so I will be making this.

I imagine this soup to be so flavorful with these great ingredients. Love the fresh coriander leaves as the garnish. Looks wonderful.
