Hi Jeanne, the bulgar wheat adds a nice bit of texture and absorbs some of the liquid. You could substitute with cous cous, rice (rinse well) or soup pasta (keeping the overall cooking time the same but only cooking the added ingredients for as long as they take to cook). I haven’t tried making it without but if you served it with rice to mop up the juices I think that would work OK.

Like you I’m a big fan of Cirio tomatoes (thanks for linking to my recipe) Chorizo and Tomato really is a match made in heaven. I’ve never used bulgar wheat in a one pot dish so must give it a try.

Cirio is wonderful, it was fascinating when I travelled to Italy with them two years ago.

This looks great. I love one pot dishes as I hate washing up! Bulghur wheat doesn’t agree with me so maybe I could swap for buckwheat. Adore chorizo smokey flavours – lovely!
