Tomato, Red Onion & Coriander Salad
A simple tomato, red onion and coriander salad which is perfect with curries, barbecues etc.

- 5 Tomatoes, sun-ripened
- 1 Red onion small
- 2 - 3 tbsp Hemp Seed Oil or Extra Virgin Olive Oil
- 1 handful Coriander leaves (cilantro)
- 1.5 tbsp Lemon or lime juice
- Freshly ground salt & pepper
Slice up the tomatoes and overlap in a dish.
Cut the onion up into rings and scatter over the tomatoes.
Chop and the coriander leaves and scatter over the top.
Drizzle the whole salad with the hemp seed oil and lemon/lime juice.
Season lightly with freshly ground salt and pepper.
Serve as a side dish to curries, grilled meat, bbq food etc..
