Ah I was worried and sneaky so I threw a heap of garlic and onions in the bottom of the slow cooker with a wee 200ml of chicken stock and seared all sides in a pan covered in salt and pepper. Did it on 6 hours on high and it fell apart and my Queen and Princesses were delighted! Sorry for going off recipe. I’m 100% sure now all would have been fine lol. But thank you for the confident recipe to do it on high for 6 hours! A 2.5kg Irish leg of lamb. Was delish!

I couldn’t believe how tasty this was with only 2 ingredients. I’m ashamed to say I doubted the recipe and thought it was too simple to taste any good (and also that it must need liquid), but I wanted to use the slow cooker so I decided I’d give it a go anyway. I’m so glad I did! I’m happy to say I was very very wrong! I’ll never do slow cooker lamb any other way in future. Thanks for the great idea!

I think a stock pot would be a bit wet but if it’s all you have then use it. I didn’t have lamb so used a beef stock cube at Easter which worked just as well:-)

It was great to have this cooking in a nanosecond. I didn’t have any stock cubes, so I sprinkled onion soup mix generously on it.

I made quick cous cous to go with it and used the drippings to moisten and flavour the cous cous instead of butter in the last step. Success!
(Otherwise I’d save it for a soup base or risotto.)

Beautifully tender. Gave it the love! Placed on a bed of medium carrots, parsnips whole garlic and onions cut in half. Sprinkled stock cube fresh rosemary and threw in some bay leaves. Half cup water in base. Only needed 5 hours cooking. So test around this time as a guide.0 1.8 kg weight. At end of cooking scooped the stock out and added a little cornflour to thicken stock on stove. Sol tender!

I’ve never tried it with a rolled shoulder so couldn’t vouch for the timing on that but I imagine it would work. I’d Google timings for a slow cooked rolled shoulder if I was you to double check. Not sure a rolled shoulder would have the same outer layer of fat so the finished result might look different too.

Hi Amy, I did experiment with a beef joint once but it wasn’t great. I think you need a bone for the meat to be succulent like this lamb. But if your oven has broken down then you could do this. Once you have the gravy and trimmings with it it won’t be bad and carve it thinly as it was on the tough side (but you could cook it less long too). It just wasn’t good enough to blog but it was edible.
