Today I’m sharing my stupidly easy plus utterly moist and delicious 2 Ingredient Slow Cooker Roast Lamb.
As we head into summer and look forward to balmy hot days I really don’t want to spend much time cooking or switch the oven on in an already hot kitchen. Last Sunday it was a sweltering day and I had a virus. The last thing I wanted to do was cook or wash up lots of greasy, burnt pans but I had half a leg of lamb that needed cooking.
So instead of roasting it in the oven along with potatoes, I decided a less messy and cooler solution would be to roast my half leg of lamb in the slow cooker and to make ActiFry roast potatoes. Then all I had to do was boil/steam some vegetables and make some gravy.
In the past, I have made cuts into the lamb joint and inserted garlic and fresh rosemary.
However, this really was one of those days where even the bare minimum was a huge effort. Hence, I decided that hubby’s idea of just sprinkling over a lamb stock cube for a bit of flavour enhancement sounded like a fab idea.
If you have a cook’s syringe or one of those fancy jugs that separates the fat from the meat juices then you can add the juices to your gravy for a great flavour boost.
We were all in food heaven eating our lamb Sunday roast, the meat was tender and falling off the bone and the the stock cube enhanced the lamb flavour!
I was very happy to not have messed up my oven with all the lamb fat and there were no cumbersome roasting tins to wash up.
So summer or winter I will be using the slow cooker to roast all my lamb joints from now on and it’s so energy efficient too!
Do you need to brown the lamb before slow cooking?
No, there’s no need to brown the lamb before slow cooking as the stock cube forms a lovely golden finish to the skin.
Do you need any added liquid to slow-cook the leg of lamb?
No, the leg of lamb will cook in its own juices to render beautifully tender meat.
How long does a slow cooker half leg of lamb take to cook?
On high 3 1/2 – 4 hours and on low 7 – 8 hours.
How can you adapt this slow cooked roast lamb recipe?
If you have a bit more time then you could make some cuts into the lamb and add garlic cloves (side sliced in half) and sprigs of rosemary for a delicious alternative.

2 Ingredient Slow Cooker Roast Lamb
Ingredients
- 1 kg ½ leg of lamb (for bigger joint see notes below)
- 1 lamb stock cube
Instructions
- Place lamb joint in slow cooker and crumble over stock cube.
- Place lid on and cook for 3 ½ to 4 hours on high or 7 to 8 hours on low or until tender.
- Serve with vegetables and gravy of your choice.

So much to do, so little time. It was great to have this cooking in a nanosecond. I didn’t have any stock cubes, so I sprinkled onion soup mix generously on it.
I made quick cous cous to go with it and used the drippings to moisten and flavour the cous cous instead of butter in the last step. Success!
(Otherwise I’d save it for a soup base or risotto.)

Beautifully tender. Gave it the love! Placed on a bed of medium carrots, parsnips whole garlic and onions cut in half. Sprinkled stock cube fresh rosemary and threw in some bay leaves. Half cup water in base. Only needed 5 hours cooking. So test around this time as a guide.0 1.8 kg weight. At end of cooking scooped the stock out and added a little cornflour to thicken stock on stove. Sol tender!

Put quartered onions and cubed potatoes in the slow cooker for the lamb to sit on and add a cup of chicken stock………. delicious

I’ve cooked beef joints in my slow cooker. I suggest fo cook it on low and put joint on a layer of onion,garlic and carrots with a little gravy/liquid other wise it can become too dry.

Can I just use the same instructions for a rolled shoulder of lamb joint?

I’ve never tried it with a rolled shoulder so couldn’t vouch for the timing on that but I imagine it would work. I’d Google timings for a slow cooked rolled shoulder if I was you to double check. Not sure a rolled shoulder would have the same outer layer of fat so the finished result might look different too.

Could I do this with a beef joint in a slow cooker? Do you need liquid? My oven is broke and an engineer isn’t coming until Tuesday. I would live a roast and would prefer beef. Many thanks Amy

Hi Amy, I did experiment with a beef joint once but it wasn’t great. I think you need a bone for the meat to be succulent like this lamb. But if your oven has broken down then you could do this. Once you have the gravy and trimmings with it it won’t be bad and carve it thinly as it was on the tough side (but you could cook it less long too). It just wasn’t good enough to blog but it was edible.

And no you don’t need any liquid. I would put some halved onions in the bottom which would be good!
