Creamy, quick and delicious, this Prawn Curry is made with fresh cream, mild Madras curry powder, spring onions and mushrooms. It’s perfect for rustling up midweek, and mild enough for the whole family to enjoy.

We are big curry fans in our house, and one that I make on a regular basis is my mother’s mild Prawn Curry.
Cooked with spring onions and mushrooms in a tomato and cream-based sauce, this really is totally delicious.

When I was growing up, my mother would serve banana slices along with mango chutney to accompany our curries. A tradition that I carried on when I left home, but had forgotten about until now.
I shall be starting up this tradition again as the sweet banana contrasts really well with the curry sauce, and it’s a good way of getting in some extra vitamins and minerals!
As well as Basmati rice, you can also serve Prawn Curry with naan or flatbread.

Prawn Curry
Ingredients
- 2 tbsp Coconut oil
- 1 bunch Spring onions chopped
- 225 g Chestnut or Portabello mushrooms sliced
- 300 g Cooked peeled prawns
- 2 tbsp Tomato puree (paste in US)
- 2 tbsp Mild Madras curry powder
- 1 x 400g Tin chopped plum tomatoes
- 150 ml Single cream
- Freshly ground salt & pepper
Instructions
- Heat the oil in a large non-stick pan and gently fry the spring onions for a few minutes to soften (not brown).
- Add the sliced mushrooms and curry powder and fry until cooked through.
- Add the tomatoes, tomato puree, salt and pepper.
- Bring to the boil then reduce the heat to let it simmer and add the prawns and allow to heat through for a few minutes.
- Finally add the single cream and heat through before serving.
- Serve on a bed of basmati rice with your favourite Indian relishes.

I tried making this and I didn’t mess it up – my cooking skills leave a lot to be desired – I wasn’t sure about the inclusion of the mushrooms but they complimented it amazingly well. Even my ever so fussy 18 year old daughter loved it, and with her saying that is high praise indeed! This is now in rotation of meals. ;0)

We always ate curries with bananas, nut and raisins when I was a child, a habit my mother acquired when we lived in Singapore, I think it was to lessen the strength of the curry, I think it’s a great idea, I may reintroduce it to, thank you for the suggestion.
The App sounds interesting, but I’m puzzled as to the Armed Forces being included as they have amazing catering, wherever they are.
