Cream of Asparagus & Celery Soup is a great way to make a little asparagus go a long way by adding celery which enhances the flavour! So quick, easy & delicious!

Today I’m sharing Cream of Asparagus & Celery Soup!

Last week I came across a bargain pack of asparagus and I immediately wanted to make asparagus soup but could see that 250 g of asparagus was never going to stretch to a soup to feed all 4 of us (son now back from university).

So after a quick rummage in the fridge I found some organic celery (if you haven’t tried organic celery you must, way tastier than the ordinary one) and decided that this would probably be a cheap way of padding out my asparagus soup!

Well not only was it cheap alternative but the organic celery seemed to act as a flavour enhancer to the asparagus and my Cream of Asparagus & Celery Soup was an instant hit with the family. So much so that we’ve had it three times in the last week and a half!

Asparagus is only in season in the UK for a short period (23rd April – 21st June usually) so make the most of it while you can as it still seems to be in the shops right now. If I see anymore bargain asparagus I will make up a few batches for the freezer so that we can enjoy my soup once the asparagus season is over.

If you don’t have any vegetable stock you could always use chicken stock but just don’t use those stock cubes that easily crumble. I had run out of my usual stock the other day and when I made my Cream of Asparagus & Celery Soup with this type it wasn’t nearly as tasty.

Cream of Asparagus & Celery Soup

Cream of Asparagus & Celery Soup is a great way to make a little asparagus go a long way by adding celery which enhances the flavour! So quick, easy & delicious!

Ingredients

  • 1 tbsp olive oil
  • 25 g unsalted butter
  • 150 g celery preferably organic, finely sliced
  • 1 onion finely diced
  • 250 g asparagus roughly chopped
  • 600 ml good quality vegetable stock
  • 4 tbsp 60 ml double cream
  • Freshly ground salt & pepper

Garnish

  • extra double cream
  • grinding of chilli & garlic flakes

Instructions

  • Melt the butter and oil in large pan over a low – medium heat.
  • Add the onion and celery and sweat under a lid (without browning) stirring occasionally for 8 minutes (or until softened).
  • Stir in the asparagus and continue cooking for another 2 minutes.
  • Add the stock and seasoning, bring to the boil and then lower to a simmer for 7- 8 minutes (or until the asparagus is tender).
  • Add the double cream and blend the soup.
  • Return to the hob and gently heat through.
  • Serve with a swirl of double cream and a grinding of chilli and garlic flakes.

    Making this now..some celery and asparagus showed up in my delivery and was frozen..so this looks like a good way to use it up.

    Just wondering about freezing any leftovers? The cream could be an issue??

      Hi Susan, freezing would be fine or just keep the leftover soup in your fridge for 3 – 4 days. I always find soup tastes even better the next day.

    I didnt have an onion so i used a bunch of scallions/green onions. Added a dash of cayenne and liked it cold as well. It was delicious.

    I had a few spears of asparagus left over weighing less than 175g. Made this recipe adjusting other ingredients accordingly for 2 people and it was absolutely delicious. The flavour of the celery is almost indicernible but enhances the asparagus flavour and makes it go further. A real winner and we will certainly make this again.. Impressive enough for dinner parties and easy enough for a quick lunch with friends.

    I often make soup and I had some aspragus and celery and looked online for a recipe and chose this one. It was honestly really really delicious! I will be making it again. It is nice enough to have at a dinner party or to impress friends for lunch!

    I’m a huge fan of asparagus. Love it in soup and also seasoned and wrapped in Parma ham then griddled with crunchy toast and Hollandaise Shame asparagus doesn’t have a longer season

      Hi Alexx, I’m afraid I’m not best placed to answer this as I have never even tried any non-dairy milks but my gut instinct is that you need the cream in this as I’m not aware of any non-dairy creams?

        I think coconut cream/coconut milk can work. It will affect the taste. Am trying it today.

    I love asparagus – so much we’ve been thinking about growing our own but I know its a tricky one!!! I’ll have to pick some up from the supermarket to make this luscious soup!

    Such a lovely soup Camilla! I love asparagus and do tend to binge on it during its very short season lol. I really like the addition of celery to bulk it up and as a flavour enhancer too! Also, fantastic photos and gorgeous styling too! 🙂

    This photo series is absolutely gorgeous Camilla. I’m coming to you for lessons. I like the idea of the soup too and a good tip that a the relatively cheap celery can enhance the more expensive asparagus.
