I don’t think a summer has gone by without Pimm’s No.1 & Lemonade being enjoyed here. It’s just terribly British and compliments summer gatherings and BBQs perfectly.
So, when thebar.com asked if I’d like to come up with my spin on a classic cocktail it simply had to be Pimm’s No.1 & Lemonade.
The classic recipe includes strawberries and cucumber but I like to switch things around a little sometimes.
Here I have used cherries plus slices of apple, kiwi fruit, and orange topped with the classic sprig of mint,
I don’t think a classic should be played around with too much!
I also frost the glass as it just makes it so much more fun and gives a sense of occasion even if you aren’t having a summer party but just a leisurely chilling on your patio!
I discovered the simplest way to frost a glass is to place a slice of orange (peel cut off) on a flat surface, swivel the rim of the glass on it, and then dip it into a saucer of caster sugar. So simple and so effective!
I do hope you try my version of Pimm’s No.1 and Lemonade and don’t forget to eat the luscious fruit at the end, I find that one of the best bits!

Pimm’s No.1 & Lemonade – my take on this classic!
- 50 ml Pimm’s No.1
- 150 ml lemonade
- 2 cherries
- 1 slice orange halved
- 1 slice kiwi fruit halved
- 2 slices apple which has been cored & quartered
- sprig of mint
- ice cubes
For glass frosting
- slice of orange peel removed
- caster sugar for dipping
- Frost the glass by placing the orange slice onto a flat surface and rotating the rim of the glass over it so that the whole rim is wetted.
- Place some caster sugar in a saucer (about 2 mm) and shake level, then dip the glass in the sugar to coat.
- Fill the glass with ice.
- Add the Pimm’s No 1.
- Then add the fruit and lemonade.
- Garnish with a sprig of mint and add a straw.
- To make a jug add ice and handfuls of fruit keeping the ratio of 1 part Pimm’s No 1 to 3 parts lemonade.
