Warm Chicken, Bacon and Tarragon Salad with extra virgin olive oil and lemon dressing is a tasty low-carb meal!

Warm Chicken, Bacon and Tarragon Salad

My mum seems to be a never-ending resource of recipes and one will just pop into my head from time to time and a quick phone call later I have the bones of one of her old dishes which half the time she’s forgotten about herself.

As the recipes are all stored in her head the quantities sometimes need a little tweaking but I think it’s good that I’m writing them down now so at least I can pass them on to my daughter.

Having launched a Father’s Day competition for Pyrex I thought I would make this dish in honour of Father’s Day using one of their fabulous lipped non-stick frying pans.  

I have enjoyed hearing what everyone’s dad’s favourite dishes are or were. I wanted to make something that would be suitable for any kind of weather as it’s been so very up and down this year, well down mainly!

My dad and my husband both love this salad so that’s why I thought I’d share it with you.

So here’s a quick overview of how you make Warm Chicken, Bacon and Tarragon Salad:

Then pile on the chicken and bacon pieces and drizzle over the dressing – enjoy!

Warm Chicken, Bacon and Tarragon Salad

A warm chicken, bacon and tarragon salad with an olive oil and lemon dressing that tastes sublime!

Ingredients

  • 240 g nitrite-free smoked or unsmoked streaky bacon cut into 2cm slices
  • 2 tbsp extra virgin olive oil
  • 500 – 650 g skinless chicken breasts I use mini fillets chopped into bite-size pieces or you can leave whole
  • 1 bunch spring onions chopped into 2cm pieces
  • 2 tsp dried tarragon
  • 4 tbsp extra virgin olive oil
  • 1 lemon squeezed
  • freshly ground salt and pepper

For Salad

  • 180 g mixed salad leaves (2 bags)
  • 20 cherry tomatoes halved or left whole
  • 2 avocados sliced
  • 24 pitted Kalamata olives

Instructions

  • Assemble the salad ingredients (mixed salad leaves, cherry tomatoes, avocado slices, and olives) on 4 plates ready for the warm chicken and bacon.
  • Fry the bacon strips in extra virgin olive oil in a large frying pan until crispy.
  • Remove bacon with a slotted spoon and put to one side. Make sure any burnt bits are removed from the pan.
  • Season the chicken pieces, add to the pan and fry until opaque on both sides.
  • Then add the spring onions and tarragon and continue to fry until chicken is golden all over.
  • Add the olive oil and lemon juice and heat through for about 30 seconds.
  • Using a slotted spoon add the chicken and spring onions to each salad in a mound in the centre and then add the crispy bacon pieces.
  • Next pour on the warm dressing left in the pan.
  • Serve on it’s own or with some crusty bread.

    I’ve just eaten a salad for my tea! We had chicken cooked too but not on the salad – had I seen this prior to my dinner I could’ve tried this out. Most of it seems great, I’m just not 100% sure about the bacon too – may be a bit too much for me… The only way to know is try it I suppose ๐Ÿ™‚

    Chicken, bacon and avocado is such a great combination, I’ve never tried it with tarragon before though. It’s definitely salad season, I’ve had 2 already this week, might have to make this my 3rd salad of the week!

    I love the combination of bacon, tomatoes and avocado – and in a salad, what could be better! The tarragon is definitely an interesting twist and I’ve never tried that before… Very tasty, Camilla!
