This Tomato, Red Onion & Coriander Salad is a fresh, vibrant dish that’s bursting with flavour and ready in minutes. Perfect as a side for curries, grilled meats or BBQs, it’s a healthy, zesty addition to any meal.

There’s no salad dressing to make as you pour the dressing ingredients straight onto the salad, making it super quick and easy!

Sometimes less is more with food, and this Tomato, Red Onion and Coriander (Cilantro) Salad is certainly testament to that.

I’ve not been feeling the salad vibe recently with the weather being so atrocious, but whenever we have curry, I always make this salad as an accompaniment.

If you can make it in advance, all the better to allow the flavours to develop. However, I have to admit that I often throw it together whilst cooking and enjoy any leftovers the next day!

I was recently sent the new Oxo Little Salad & Herb Spinner, which has undergone a bit of a makeover.

I have to say it was brilliant for spinning my coriander, and it is also big enough to spin enough lettuce to make an average-sized green salad.

The rubberised base makes it stick to the work surface, and the plunger makes spinning simply effortless.

The braking is now almost instantaneous, and the redesign from sloped to straight sides means that it is more space-efficient and easier to store.

The bowl is so smart that if you’re pushed for space in your cupboards, I would use the bowl to serve the salad in, too.

The Good Oil company also sent me a sample of their Hemp Seed Oil recently, and I have to say, aside from all the wonderful health-giving properties it has, which you can read about on their website,

I enjoyed the nutty, earthy flavour it imparted to the salad. Did you know that just 1 tablespoon gives you 94% of your daily recommended intake of Omega-3!

It has so many health benefits that I’m surprised it’s not available on prescription! It’s not just for making salad dressings, though, and can be used in the same way as extra virgin olive oil.

Tomato, Red Onion & Coriander Salad

A simple tomato, red onion and coriander salad which is perfect with curries, barbecues etc.

Equipment

  • Paring knife
  • Wooden chopping board
  • Measuring spoons
  • serving dish

Ingredients

  • 5 Tomatoes, sun-ripened
  • 1 Red onion small
  • 2 – 3 tbsp Hemp Seed Oil or Extra Virgin Olive Oil
  • 1 handful Coriander leaves (cilantro)
  • 1.5 tbsp Lemon or lime juice
  • Freshly ground salt & pepper

Instructions

  • Slice up the tomatoes and overlap in a dish.
  • Cut the onion up into rings and scatter over the tomatoes.
  • Chop and the coriander leaves and scatter over the top.
  • Drizzle the whole salad with the hemp seed oil and lemon/lime juice.
  • Season lightly with freshly ground salt and pepper.
  • Serve as a side dish to curries, grilled meat, bbq food etc..

    I plan to make it tonight to pair with a curry, as you do. Looks great!
    I gave it 5 stars even without making yet lol because its the exact confirmation what I need to know to use the exact same ingredients left in my fridge which are in your recipe. (exchanging avocado oil for the hemp oil)

    I love a simple salad with a few ingredients that tastes delicious. I can imagine this is great served with a curry as you suggest.

    Love the combination of red onion with tomato, Camilla! And such a beautiful combination of fresh and bright colors. I also have a salad spinner which I do love, although I’ve been buying a lot of pre-washed organic greens recently and not washing :/

      Thanks Mark, I couldn’t live without a salad spinner since my husband bought me one about 20 yrs ago. Now I have the big and little Oxo ones and they’re such a breeze to use:-)

    I LOVE tomato salads and I like that yours uses coriander rather than the more typical basil. Hemp Seed Oil sounds really good too. I will have to seek some out! Now I just need some sunshine to go with your salad! Thanks for entering Herbs on Saturday Camilla 🙂
