A classic Plum Crumble with added almonds in the topping and cinnamon with the plums for a truly delicious and comforting pudding.

Faced with a punnet of plums that needed using up and not having made a plum crumble for an absolute age I set about making this Plum Crumble, taking inspiration from here and there.

I think the reason I don’t make crumble all the time is the thought of the rubbing in the butter and flour. But I forget that my hand blender and jug attachment (Braun MultiQuick) double up as a food processor and a few pulses in there make a very good crumble topping.

The secret to a good crumble topping has to be the clumps! Splashing water on the crumble mixture and giving the dish a good shake is the way to achieve these.

I fondly remember the fruit crumbles I had at junior school.

Plum Crumble was my favourite, and I was lucky enough to have a friend who hated it. Hence I’d ask her to get a portion so that I could have 2 portions – it was that good!

Those were the days when school dinners cost 7p, and I remember thinking how cheap that was 3½p per course!

Frequently Asked Questions

What type of plums are best for crumble?

Any type of plum is good, e.g. Victoria, Greengage etc, but make sure they are ripe and juicy as underripe plums will be dry and tart.

How long will Plum Crumble keep for?

Store any leftover crumble in the fridge (covered) where it will keep for 3 days.

How do you reheat leftover Plum Crumble?

Place in a dish loosely covered with foil and bake in a preheated oven at 180C, 160C Fan, 350F or gas mark 4 for 15 – 20 minutes.

Can you leave out the cornflour?

Yes, if you don’t have any, you can leave it out; your plums will just be juicier.

Plum Crumble

A classic Plum Crumble with added almonds in the topping and cinnamon with the plums for a truly delicious and comforting pudding.

Equipment

  • 1 Digital scale
  • 1 Wooden chopping board
  • 1 Set of measuring spoons
  • 1 Paring knife
  • 1 16 cm x 21 cm Heat proof dish
  • 1 Fork

Ingredients

  • 550 g dessert plums (ripe) stoned & halved
  • ½ tbsp corn flour
  • 1 tsp cinnamon
  • 35 g soft light brown sugar
  • 2 tbsp water

Crumble Topping

  • 175 g light brown or plain self-raising flour or mix of wholemeal & white self raising flour
  • 100 g butter
  • 50 g demerara sugar
  • 50 g granulated sugar
  • 40 g flaked almonds or chopped

Instructions

  • Preheat the oven to 190°C, 170°C fan, 375°F or gas mark 5.
  • Place the halved plums in a dish (about 21cm x 16cm).
    550 g dessert plums (ripe)
  • Mix the corn flour, sugar and cinnamon together, sprinkle over the plums and then drizzle on the water.
    ½ tbsp corn flour, 1 tsp cinnamon, 35 g soft light brown sugar, 2 tbsp water
  • Make the crumble by putting all the crumble topping ingredients in a food processor and blitz on and off until resembles fine crumbs.
    175 g light brown or plain self-raising flour, 100 g butter, 50 g demerara sugar, 50 g granulated sugar, 40 g flaked almonds
  • Pour the crumble over the plums, spread out with a fork.
  • Splash a few teaspoons of water over the top then agitate the dish to form clumps.
  • Bake in the oven until golden for about 40 minutes.
  • Serve with custard or ice cream.

Notes

This recipe uses self-raising flour for a more cakey topping, but you can use any plain flour or a mixture of flours, e.g., wholemeal, spelt, etc. Strong flour is not advisable.

    Can I use strong wholemeal flour?

      Hi Chris, Strong flour is used for bread-making where you want long, stretchy fibres of gluten to make your bread spongy and airy. The opposite is required for a crumble topping, which you want to be crumbly. But if that’s the only flour you have, then go ahead and try it, I’m sure it won’t be a disaster. It’s just not the best type of flour to use. I’d also advise working it quickly, as you don’t want to develop those gluten fibres!

    Just prepared a slight variation of this for pud tonight using up plums, pears, apples and some blueberries. Ran out of cinnamon this morning so I mixed nutmeg in with the topping and added a handful of porridge oats for texture. Looking forward to eating it! 🙂 You might want to fix your recipe though as some of the crumble topping ingredients are in the fruit section. I’m assuming the flour and brown sugar get processed along with everything else?

    I think crumbles are the ultimate comforting dessert because they’re SO easy and they’re SO delicious! Whenever I’m short on time and I just want something sweet, this is a must… I’ve never tried it with plums, but I can imagine it is fantastic…

    I am in complete agreement – this is a fab winter pudding but I have to have mine with a big dollop of clotted cream 🙂 My plums are in the fridge just waiting to be turned into such deliciousness.
