I really wasn’t sure about blogging this as perhaps everyone knows how to make coleslaw. So maybe this post is more about reminding you how easy and cheap it is to make and far tastier than the stuff you can buy in the supermarket. There seem to be two types available, the one where the cabbage and carrot are cut into tiny pieces in a vinegary mayonnaise or the luxury type which is more natural but swimming in mayonnaise. Did you know that raw white cabbage is a very good source of vitamin C and contains as much as lemon juice?
My daughter loves this coleslaw so much that she would happily just have coleslaw sandwiches in her lunch box! I tend to make up about half a small white cabbage worth of coleslaw with a carrot and a medium red onion at a time as it is best eaten within 2 days.
I reckon for about 60p you can make a medium sized serving bowl of coleslaw which if you bought in the shops would cost you a few pounds as this is luxury style, not cheap and nasty! (The picture above is just half of the coleslaw that I made using 1/3 of a medium cabbage). I am entering this dish into Credit Crunch Munch which is a joint venture with Helen at Fuss Free Flavours who is hosting this month.
This is so easy, you need never buy coleslaw!
Just put all the shredded vegetables into a bowl and gradually mix in mayonnaise to coat.Enjoy in your favourite sandwich or wrap – I love turkey and ham (home cooked of course)!

Looks very nice and appealing.

I always make homemade coleslaw too – it’s more of a salad than a condiment when it’s homemade – the bought stuff is really just a lumpy mayo!
I like to add a touch of coriander in mine & some greek yoghurt too – and a few chilli flakes, although the kids moan about that!

I adore coleslaw and thought about making it one day, so this is ideal for me. I will let you know what I think of it…
Camilla
It’s so much better and cheaper than the shop bought stuff:-)

That’s exactly how I make mine, too 🙂
Healthy, tasty, easy and goes with so many things.
My mum adds lemon juice to hers, which is also nice, but I prefer it without, like your version.
Camilla
Have been making a lot of this lately, think daughter could live off it LOL:-)

I never thought white cabbage was as good for you as green, but it is, so I’ll be eating more coleslaw this year.
