Monday Pie is a great dish for using up your leftover roast beef! So quick, easy and delicious, you’ll be making this again and again!

I thought it was high time I updated my popular Monday Pie recipe and photography.

This is a traditional recipe for using up your roast beef from Sunday which I originally adapted by adding mushrooms and par boiling the potato slices.

When you make something a lot you often make little tweaks and so the only one I have made since is to add a whole tin of tomatoes instead of just half.

We don’t have my Monday Pie nearly as often now since my daughter became a vegetarian but as my son came back from University at the weekend we had roast beef and so of course on Monday it had to be Monday Pie!

I have to admit that my mind wasn’t completely on the job in hand.

Having a poorly cat that I’m nursing round the clock, a daughter who suddenly had an asthma attack and needed collecting from school just as 2 trucks delivering and mixing concrete had parked across my driveway and then having the noise of said trucks on my return meant that I forgot to add the gravy powder to the recipe.

I also blame having a new laptop which I haven’t wanted to ruin by bringing into the kitchen so thought that I’d use my Google Home Mini to read out the recipe.

So although I got the gravy powder out of the cupboard, I skipped forward and then simply forgot.

I had tried using my phone but it kept going to sleep, maybe I need to adjust the settings as you can’t keep touching your phone while you’re cooking!

So just imagine that the sauce is a little browner and thicker as I didn’t want to have to wait another couple of months before my son came back from uni again!

If you haven’t had Monday Pie before I do hope you try it as it’s so easy to make and comfort food at its best!

You simply start by par boiling your potato slices and then mix all of the other ingredients together bar the cheese which is added 15 minutes before the end.

Monday Pie

Monday Pie is a kind of hot pot which provides tasty mid-week comfort food that’s sure to please your hungry family.
Course Main
Cuisine British
Prep Time 15 minutes minutes
Cook Time 50 minutes minutes
Total Time 1 hour hour 5 minutes minutes
Servings 4

Ingredients

  • 475 g potatoes thinly sliced
  • 250 - 350 g cold roast beef chopped into 1cm cubes
  • 2 onions medium sized, finely chopped
  • 75 g mushrooms finely chopped
  • 420 g tin of baked beans
  • 400 g tin of Chopped tomatoes
  • 1 tsp gravy powder
  • 1 tsp Worcester sauce
  • 1 tsp plain flour
  • 100 g Cheddar cheese grated
  • salt & freshly ground pepper

Instructions

  • Pre-heat oven to 190°C.
  • Par-boil the potato slices in a pan of boiling water for 5 minutes.
  • Mix all the other ingredients together except the Cheddar.
  • Put in a dish and cover with potato slices.
  • Bake in oven for 30 minutes and then cover with grated Cheddar.
  • Return to oven for 15 minutes until the cheese has melted and going golden.
  • Serve with vegetables of your choice.

    Had frozen leftover brisket my husband had smoked. Usually make chili but I just made chili 2 days ago. Left work still not knowing what I was going to do with the brisket. Found this recipe on my way home. I’m so glad I tried it. Brisket has a tendency to be dry when reheated, this was so tender and juicy from the tomatoes and beans. This one is a keeper for sure.

    Can I add the left over gravy from the roast instead of the gravy powder and flour?

      The gravy powder and flour absorb the moisture from the tomatoes and beans and thicken the sauce so if you add just gravy I think the pie would be too wet. You could experiment but as it’s not something I’ve done I can’t give any solid guidance.

    Was surprised that raw onion would go in with rest of ingredients so sautéed it first with clove of garlic too,glad I did as turned out perfect.Added a little extra 2 table spoons of water so not too dry.Add plenty of salt and pepper.Could add herbs etc to pimp up but great kept plain for kids.Was great meal for leftover red meat

    The first time I heard of Monday pie was out of a recipe book my first wife was given in 1972 along with the milk deliver, we loved it, I must have a go at making it. Thank you for reminding me of good food.

    Made this for my fiancé & sister with their leftover beef – it went down a proper treat they loved it. I plopped a little bit of BBQ sauce in it also, but only a little, only thing I did different. Might have to make a vegan version for me!

    Tasty and comforting – my only tweak would be to fry the onions first as they were a bit raw tasting (I may not have chopped them finely enough though). Thanks for the recipe!

    Hii.
    Great recipe and very easy to follow, except for the oven temperature. Is the 190 for ordinary (do they still exist?) ovens or for fan ovens.

      Hi Rob, all my oven temps are for standard ovens (I do have a fan oven but I think it was made on a Friday so it’s never behaved like a fan oven, so if I reduced the temp like they said I should, everything was uncooked).

    Lovely way to use up roast beef! My beef chunks were in the freezer, so I fried the onions and mushrooms first, and heated up the beef with the tomatoes and baked beans first before putting them in the casserole. I didn’t have any potato, so i topped it with sliced butternut – it was delicious!

    I have made this a few times now and I have used whatever we had for Sunday dinner, Beef, Chicken or Ham. I now put chorizo in with whatever meat I use always tastes good and goes down well with the family.

    Just popped this in the oven. Went looking for “leftover roast beef recipes” and this one seemed most intriguing of those on offer. I had to make all of the other things to go with it, including the beans, but still looks worth the effort.

    I felt compelled to make it on a Monday also though I’m sure it would be fabulous any other day of the week too.

    I love usinmg left over sunday roast and make something similar toi this. I tend to cook extra boiled potatoes and mash them for the pie topping but sliced potoates look good too

    If you have a portion leftover and what would be the best way to reheat it?

    Made this recently and loved it but due to the cooking dish I used the portions were a bit bigger than we would have liked. Want to make it again but don’t want to waste any!

      Hi Rosie, if you have a microwave I would reheat it in that for a few minutes until piping hot. A food thermometer is great for this!

      I have only ever used beef so can’t say how that would taste I’m afraid. But would you put chicken as a sub for lamb or beef in a Shepherd’s Pie? That’s probably your answer!

    I love the idea of using left overs for another meal and this one is superb. My mum used to do a pie like this with roast left overs. She’d mash the potatoes for the layer on top. That’s an alternative, but I like the idea of potato hash layer also. Thanks

      Thanks Crystal, yes we have something called Shepherd’s Pie that has a mashed potato topping, this is far quicker and easier though.

    Beef and lamb get whizzed in the food processor with an onion, add gravy and top with mashed potatoes for a cottage or shepherd’s pie. That’s my Monday pie! Yours sounds good too.

    I always cook a beef roast that is way to large and always have left over beef which often goes into sandwiches. But now I will return to this recipe for what looks like a great way to use it up!

    Do you think the Worcester sauce is a key ingredient? I’m going to try to make this gluten free and don’t have any gluten free Worcester sauce (I don’t want to buy a whole bottle just for this recipe). Also, to substitute the flour, do you recommend corn flour or just plain gluten free flour?

      Hi Catherine, you could leave the Worcestershire Sauce out and with the flour use gluten free plain flour as cornflour has to be mixed with water before use.

    So tasty, a great combo. My only alteration is making some extra roast spuds the day before and thinly slicing them and placing them on top. Crisp up nicely and a good way to use up the leftovers fully. My toddler loves this dish!

    Not tried this but it looks great….. do you think it would freeze ok prior to the potato stage? I only ask as i have quite a large left over piece of beef and thought i may do this and freeze in small batches.

      I would just freeze the chopped up beef and thaw as required and use for stir fries, this pie or whatever.

    I also had lots of clean plates after cooking this but I would, coz I live on my own. It was too much for one though so I threw most of it in the bin after it had been in the fridge for two days. The phone never rings, either. But the meal was nice

      Hmm, well next time either make a) a smaller portion or b) make individual portions in those freezer foil trays and freeze for another day for a night off from cooking freeing you up to make a phone call while it’s cooking. Glad you enjoyed it anyway:-)

    Nice recipe! I have a chunk of leftover roast beef I have no clue of what to do with it 🙂 My English friend told me to look for Monday pie, and here I am!

    Will try to do it, but probably will need a bit of tweaking for local taste (no baked beans available, I’m afraid)

    There is something about adding a tin of beans. I have a Shepherd’s/Cottage Pie recipe and add beans to it and it extends it and adds a lovely sweetness to the dish. My boys always loved it when they were at home, clean plates is another aspect of ‘no waste’
